Grilled Halloumi Skewers, Watermelon Mint (Print Version)

Golden halloumi, caramelized watermelon and mint on skewers—simple marinade and quick grilling for bright summer flavor.

# What You Need:

→ Cheese & Produce

01 - 8.8 oz halloumi cheese, cut into 1-inch cubes
02 - 14.1 oz watermelon, rind removed, cut into 1-inch cubes
03 - 1 small red onion, cut into chunks
04 - 1 small bunch fresh mint leaves

→ Marinade

05 - 2 tablespoons olive oil
06 - 1 teaspoon lemon zest
07 - 2 teaspoons lemon juice
08 - Freshly ground black pepper, to taste

# How-To Steps:

01 - In a mixing bowl, whisk together the olive oil, lemon zest, lemon juice and a few grinds of black pepper until emulsified.
02 - Add the halloumi cubes and red onion chunks to the bowl and toss gently to coat. Let sit for 10 minutes to absorb flavor.
03 - Thread skewers alternately with a halloumi cube, a watermelon cube, a piece of red onion and a mint leaf, repeating until skewers are full.
04 - Preheat a grill or grill pan to medium-high heat. Lightly oil the grates or pan surface to prevent sticking; if using wooden skewers, ensure they are soaked.
05 - Place skewers on the hot grill and cook 2 to 3 minutes per side, turning gently, until the halloumi is golden and slightly charred and the watermelon shows light caramelization without becoming mushy.
06 - Transfer skewers to a platter and serve immediately. Garnish with additional fresh mint and, if desired, a light drizzle of honey or a squeeze of lemon.

  • Halloumi melts quickly if the grill gets too hot or you leave it unattended—stay close and flip gently.
  • I once skipped drying the watermelon thoroughly and it watered down the marinade—pat those cubes before threading.
03 -
  • Threading the red onion next to cheese helps mellow its bite and keeps it tender.
  • A light brush of oil on the skewers before grilling makes for a beautiful golden finish and stress-free cleanup.
